Focus on CORNELIUS APPLEJACK
From Harvest Spirits Distillery.
Cornelius Applejack is most probably the most "true-to-form" applejack you might find out there. Let's not forget applejack was distilled in the winter (or whenever it could be) and probably didn't sit for too long before people were enjoying it. This light and fiery spirit from Harvest Spirits definitely fits that bill, and is something they have been making and perfecting for over 8 years.
We were also planning on reviewing their Peach and Cherry applejack offerings, but we must have pissed them off because right in the middle of emailing back and forth, they went silent. So there won't be any of that.
So let's take a look at what it is. Harvest Farms Distillery is in Valatie, NY, which is not too far from Albany (the State Capital), and they offer tours on Saturdays and their Tasting room is open in the afternoons, and they charge $1 per taste.
The nose is apple strong, with a hint of spice that just comes from the distillation and the aging.
This is where Cornelius Applejack is stored. From everything we’ve encountered, Cornelius Applejack is unique in that it is as close to the fresh distilled apple spirit it can be and still be a legit applejack.
All we can say is that we can't review their fruit infusions because we don't have them. We were hoping to feature extra cocktails with them but it looks like it's not gonna happen. But they do exist.
