CORNELIUS APPLEJACK: Ginger-tini

Focus on CORNELIUS APPLEJACK:
The Ginger-tini.

We continue with the Applejack-Off with our first cocktail featuring Cornelius Applejack from Harvest Spirits.  Now we have often derided things ending in "-tini" which aren't true martinis, but in this case we just don't know what else to call it, so just let us have this one.  If you can think up a better name, just send it to us and we'll put it right up here.

You may remember seeing something very similar in our previous Holiday Special using ginger and applejack.  Also we did something similar with rum.  This cocktail is similar to a Whiskey MacDonald, but it's not exactly the same.

When we first tried Cornelius Applejack, it was actually a long time ago, and we weren't into applejack that much back then.  But now, we can totally appreciate it, and nothing seemed to be calling out for something to be done with this one more than ginger.  Of all the applejacks we tried, Cornelius is the, sharpest we might say (oh very much in a good way).

That's not the entire batch, but it's what we thought we'd use here in this one cocktail.  Keep in mind that when it cools, it thickens up quite a bit, and thus it is not as easy to handle as other things.

Now you could make this with just some chilled Domaine de Canton, and we're sure it will come out just awesome.  But here at Pinky Mixology we have something against that stuff.  Just let some ginger sit in some vodka for a day and you'll get the qualities you need for this drink to be awesome (notice we didn't say you'd get the same thing, since
Domaine de Canton is not easy to just mimic and it is a quality spirit... but for this kind of thing, we just think it's not needed).

Now this should be obvious, but in case you don't realize; Make sure you strain out the pieces of ginger in the syrup you made and do the same for the bits of spice that mulled in the applejack, before you put them together and shake them.

Like we said before, we were looking forward to reviewing the fruit infusions that Harvest Farms has to offer, but after telling us they'd provide some, we never heard back... so we can't. It's their prerogative (we sent them enough emails that they replied to but then all of a sudden totally stopped), but if we don't have those labels, we can't really talk about them. We'll come up with something though, and we were able to try some of their awesome on-sight only Scrumpy applejack made from true freeze distillation, so stay tuned for a look at that.
